In simple terms, pumps are used in commercial kitchens to move liquids or gases from and to different locations. The type of pump you need is based on what it will pump. Water pumps are used for, among other things, dishwashers and coffee machines. Oil pumps are used, for example, to move cooking oil in connection with deep-frying. In modern convection ovens, drain pumps are used, among other things, to automate cooking and cleaning. To create a vacuum-tight seal for food or to prevent air from entering a container, vacuum pumps are used.
